Shopping List:
3 cups jasmine rice
1 can full fat coconut milk
RICE:
3 cups jasmine rice
1 ½ cups unsweetened full-fat coconut milk (= 1 can)
2 ¼ cups water
¾ – 1 teaspoon salt (same ratio; just taste-based)
3 tablespoons sugar
Yams/sweet potatoes
2 cans black beans
2-3 limes
Cilantro
***prep/bake yams first: they can take up to 40 minutes! Or broil at end
RICE:
3 cups jasmine rice
1 ½ cups unsweetened full-fat coconut milk (= 1 can)
2 ¼ cups water
¾ – 1 teaspoon salt (same ratio; just taste-based)
3 tablespoons sugar
Instructions
RINSE: Rinse rice thoroughly
Sweet Potatoes:
Peel sweet potatoes
Cut into cubes
Toss with oil and salt, roast at 425 degrees for ~40 minutes (start checking at 25)
COMBINE: coconut milk, water, salt, and sugar, mix well
Add rinsed rice to pressure cooker
Pour liquid over it
Close lid, seal vent, turn to high pressure for 5 minutes (turn off "stay warm" setting)
Let natural pressure release for 10 minutes, then fluff with fork
Drain and rinse black beans
Toppings:
Lime juice
Lime zest
Chopped cilantro
