Shopping List:
3 cups jasmine rice, 1 can full fat coconut milk
RICE:
3 cups jasmine rice
1 ½ cups unsweetened full-fat coconut milk
2 ¼ cups water
¾ – 1 teaspoon salt (same ratio; just taste-based)
3 tablespoons sugar
Yams
2 cans black beans
2-3 limes
Cilantro
2 cans black beans
***prep/bake yams first: they can take up to 40 minutes! Or broil at end
RICE:
3 cups jasmine rice
1 ½ cups unsweetened full-fat coconut milk
2 ¼ cups water
¾ – 1 teaspoon salt (same ratio; just taste-based)
3 tablespoons sugar
Instructions
RINSE: Rinse rice thoroughly
COMBINE: coconut milk, water, salt, and sugar, mix well
Add rice to pressure cooker
Pour liquid over it
Close lid, seal vent, turn to high pressure for 5 minutes (turn off "stay warm" setting)
Let natural pressure release for 10 minutes, then fluff with fork
Peel sweet potatoes
Cut into cubes
Toss with oil and salt, roast at 425 degrees for ~25 minutes
Drain and rinse black beans
Toppings:
Lime juice
Lime zest
Chopped cilantro
